Psychology Today offers a searchable directory of resources with filters (issues, insurance, gender, etc). Those therapists who are either not accepting new clients or have a waitlist appear to be flagged as such, which will hopefully speed up the process of finding a good match. Online options are also listed.
Calling 211 in every Canadian province will connect you with Community Resource Navigators, who can look for assistance for many needs in your local area.
The National 211 Directory also shows alternative numbers to dial if your provider doesn't allow 211 calls.

The Red Cross is administering assistance up to $500 for those who were evacuated from their homes.
Small businesses impacted by the wildfires in Halifax and Shelburne may be eligible for relief up to $2,500.
